While baking soda and soda ash are chemically similar, their uses and properties differ. Baking soda, or sodium bicarbonate (NaHCO3), is primarily used as a leavening agent in baking. When combined with an acid, such as vinegar or lemon juice, baking soda produces carbon dioxide gas, which creates bubbles and causes the dough or batter to rise. This makes baked goods light and fluffy. Baking soda is also commonly used as a cleaning agent and deodorizer due to its neutralizing properties.
One key difference between soda ash and baking soda is their alkalinity levels. Soda ash has a higher pH level, ranging from 11 to 12, making it more alkaline. This higher alkalinity makes soda ash effective in industrial applications. On the other hand, baking soda has a lower pH level, around 8.4, making it suitable for culinary and household purposes.
Another difference is the taste and texture of the two substances. Baking soda has a slightly salty and bitter taste, while soda ash is tasteless. Baking soda also has a fine powdery texture, while soda ash has larger, coarser crystals.
