Baking soda, also known as sodium hydrogen carbonate or sodium bicarbonate (NaHCO3), is a commonly used household ingredient for baking and cleaning purposes. When baking soda is heated, it undergoes a chemical reaction and decomposes to form sodium carbonate (Na2CO3), water (H2O), and carbon dioxide (CO2).
The chemical equation for the reaction is:
2 NaHCO3 → Na2CO3 + H2O + CO2
During the heating process, baking soda releases carbon dioxide gas, which causes dough or batter to rise when used in baking. This gas expansion creates a light and fluffy texture in breads, cakes, and other baked goods. However, when baking soda is used in excess, it can leave a bitter taste and an alkaline residue on the baked products.
Sodium carbonate, on the other hand, is a white crystalline powder with a wide range of applications beyond baking. It is commonly known as soda ash or washing soda and can be found in various household and industrial products. Sodium carbonate is a stronger alkaline compound compared to baking soda and has multiple uses in cleaning, manufacturing, and chemical industries.
One of the significant differences between baking soda and sodium carbonate is their pH levels. Baking soda is slightly alkaline with a pH of about 8.1, which makes it suitable for neutralizing acidic substances. Sodium carbonate, on the other hand, is highly alkaline with a pH of around 11-12 and is more effective in removing tough stains and grease.
In addition to its cleaning properties, sodium carbonate is used in glass manufacturing, water treatment, detergent production, and as a pH regulator in various industrial processes. It is also an essential component in the production of paper, textiles, soaps, and even certain food products.
