From 2007 to 2015, consumption on the global fresh cream market increased by +0.9% annually. Canada registered the highest annual growth rates of fresh cream consumption between 2007 and 2015, with +2.3% growth.

In 2015, according to market research conducted by IndexBox, Germany (16%), Russia (11%), Canada (10%), and France (9%) were the leading consuming markets, together accounting for approximately 46% of global consumption. These countries were also the leading producers of fresh cream in the world.

With nearly 524 thousand tonnes of fresh cream consumed in 2015, Germany became the world's leading fresh cream consuming country. Per capita fresh cream consumption in Germany was estimated at 6.5 kg/year, which was much higher than the global average (0.5 kg/year).

The highest levels of fresh cream consumption were registered in Canada (9.7 kg/year). Russia (2.5 kg/year) had the lowest volumes of fresh cream consumption among the leading consumers. In Russia, per capita fresh cream consumption was stable at 2.5 kg/year (2015 data, 2.5 kg/year in 2007). Population growth induced a slight increase in consumption, which reached 360 thousand tonnes of fresh cream in 2015, or 2% more than in 2007.
