Commercial citric acid production is a process through which citric acid, a natural compound found in citrus fruits, is produced on a large scale for various industrial applications. Citric acid is a weak organic acid with a sour taste that is commonly used as a flavoring agent, food additive, preservative, and cleaning agent.

The production of citric acid involves a fermentation process using microorganisms such as Aspergillus niger, a fungus commonly used in industrial production. The process begins with the selection and preparation of the raw materials, which primarily include sucrose or glucose derived from sugar crops like sugarcane or corn.

During the production process, the selected microorganism is introduced to a nutrient medium containing the sugar source. The microorganism undergoes aerobic fermentation, converting the sugars into citric acid through a series of enzymatic reactions. The temperature and pH of the fermentation process are carefully controlled to optimize the growth of the microorganisms and maximize the yield of citric acid.

Once the fermentation process is complete, the citric acid is separated from the fermentation broth through various techniques such as filtration, extraction, and crystallization. Filtration is used to remove the fungal biomass and other solid impurities from the broth, while extraction is employed to obtain a concentrated citric acid solution.

Crystallization is the final step in the production process, where the concentrated citric acid solution is cooled and allowed to form crystals. These crystals are then separated from the remaining liquid, dried, and milled to produce a fine citric acid powder.

The commercial production of citric acid requires large-scale fermentation tanks, filtration equipment, extraction units, and drying systems. The process is typically conducted in specialized manufacturing facilities that adhere to strict quality control standards to ensure the production of high-purity citric acid.

Citric acid produced through commercial processes is used in various industries. In the food and beverage industry, it is used as a natural preservative, acidulent, and flavor enhancer. It is also widely used in the pharmaceutical industry as an excipient in the formulation of medicines and dietary supplements.

Additionally, citric acid finds application in cosmetic and personal care products as a pH adjuster and chelating agent. It is also utilized in cleaning agents and industrial processes such as metal cleaning, descaling, and water treatment.
