Citric Acid Production

Citric acid is a natural acid found in citrus fruits like lemons, oranges, and grapefruits. Citric acid can be produced through a fermentation process using Aspergillus niger, a filamentous fungus.

The citric acid production process generally involves the following steps:

Strain Selection: The first step in citric acid production is to select a suitable strain of Aspergillus niger. Strains are chosen based on their ability to produce high amounts of citric acid and their resistance to contaminants.
Inoculum Development: A small quantity of the chosen strain is inoculated into a nutrient-rich medium and allowed to grow under controlled conditions. This step helps in obtaining a large quantity of viable spores.
Fermentation: The inoculum is then transferred into a large fermentation tank filled with a carbon-rich medium, which usually includes sucrose or glucose as the carbon source. The medium also contains other essential nutrients like nitrogen and minerals. The fermentation process is carried out at an optimal temperature and pH level, allowing the Aspergillus niger to convert the carbon source into citric acid.
Isolation: After the fermentation phase, the citric acid-containing broth is separated from the fungal biomass. This can be achieved through filtration or centrifugation processes.
Purification: The citric acid solution obtained from the isolation step is further purified to remove impurities and by-products. The purification process typically involves steps like precipitation, filtration, and crystallization.
Drying: The purified citric acid is then dried to remove any residual moisture. Different drying techniques can be employed, including spray drying or drum drying.
Packaging: Once the citric acid is completely dried, it is ready for packaging. It is commonly packed in bags or containers suitable for transport and storage.

The production of citric acid has seen advancements over the years, with improvements in strain selection, fermentation conditions, and purification techniques. These advancements have resulted in higher yields and increased efficiency. Additionally, citric acid production using genetically modified organisms (GMOs) has also been explored to enhance productivity.
