Sugar is a widely consumed sweetener that is produced from two primary sources: sugar beets and sugar cane. Both beet and cane sugar manufacturing involve similar processes, but there are some differences in terms of cultivation, harvesting, and extraction methods.
Sugar Beet Manufacturing:
Sugar beet is a root vegetable that is primarily grown in temperate climates. The manufacturing process starts with the cultivation of sugar beets. Farmers prepare the soil, sow the seeds, and provide the necessary nutrients and irrigation for the growth of the plants. The beets take around five to six months to mature.
Once the sugar beets are fully grown, they are harvested. Mechanical harvesters are used to uproot the beets, which are then transported to the sugar processing facilities. In the processing plants, the beets are thoroughly washed to remove dirt and debris.
The next step is extraction, where the sugar is separated from the beet pulp. The beets are sliced into thin strips, known as cossettes, which are then soaked in hot water to extract the sugar. This process is called diffusion. The sugar-containing water, also known as raw juice, is then separated from the pulp through a series of screens and filters.
After the extraction, the raw juice undergoes a purification process. Lime is added to neutralize the acidity and remove impurities. The juice is heated, and impurities form a scum on the surface, which is skimmed off. The purified juice is then evaporated to remove excess water and concentrated before being crystallized.
The final step in sugar beet manufacturing is drying and packaging the sugar crystals. The concentrated syrup is cooled, and the sugar crystals are formed. The crystals are separated from the remaining syrup in a centrifuge and dried using hot air. The dried sugar is then packaged and ready for distribution and consumption.
Sugar Cane Manufacturing:
Sugar cane is a tropical grass that is primarily cultivated in tropical and subtropical regions. The manufacturing process for sugar cane is relatively similar to sugar beet, with some variations in cultivation and harvesting methods.
Unlike sugar beets, sugar cane is a tall perennial grass. It is manually harvested by cane cutters who cut the stalks close to the ground. The cut cane is then transported to the processing facilities. The stalks are cleaned to remove leaves and other debris.
Similar to sugar beet, sugar cane undergoes an extraction process to separate sugar from the cane fiber. The stalks are crushed using heavy rollers to extract the juice. The juice is collected and passed through a series of screens to remove any solid impurities.
The extracted juice is then purified through a process called clarification. It involves the addition of lime to remove impurities and the use of heat to separate the scum. The clarified juice is evaporated to concentrate it further before undergoing a crystallization process.
Crystallization converts the concentrated juice into sugar crystals. The juice is boiled until it reaches a supersaturated state, and then it is cooled down to promote crystal formation. The sugar crystals are separated from the syrup through a centrifuge and then dried and packaged.
Both sugar beet and cane sugar manufacturing processes result in the production of white sugar crystals. The extracted juice contains other components like molasses, which are further processed to produce byproducts such as molasses, ethanol, and animal feed.
