Manufacturing Process of Citric Acid

Citric acid is a natural preservative and flavor enhancer found in various fruits such as lemons, limes, and oranges. It is widely used in the food and beverage industry for its acidic and sour taste. Citric acid can also be produced through a manufacturing process using various sources such as sugar, corn, and molasses.

Fermentation

The manufacturing process of citric acid begins with a fermentation step. In this step, a microorganism called Aspergillus niger is used. The microorganism is added to a fermentation medium consisting of a carbon source such as sugar or molasses, which provides the necessary nutrients for the growth of the microorganism.

The fermentation takes place in large fermentation tanks under controlled conditions of pH, temperature, and aeration. During the fermentation process, Aspergillus niger consumes the carbon source and produces citric acid as a metabolic byproduct.

Isolation and Purification

After the fermentation process, the mixture containing citric acid, mycelium (fungal biomass), and fermentation broth is transferred to separation tanks. The first step is to separate the mycelium from the fermentation broth. This can be done by centrifugation or filtration.

Once the mycelium is separated, the remaining liquid is further processed to isolate and purify the citric acid. The liquid is first treated with lime (calcium hydroxide) to adjust the pH and precipitate impurities. Calcium citrate is formed as a result of this process.

The calcium citrate is then treated with sulfuric acid, which results in the formation of citric acid and calcium sulfate. The insoluble calcium sulfate is removed via filtration, leaving behind a solution of citric acid.

Crystallization

The next step in the manufacturing process is the crystallization of citric acid. The citric acid solution is concentrated under vacuum to increase its saturation. By controlling the temperature and concentration, the citric acid molecules form crystal nuclei.

The crystal nuclei are grown by a controlled cooling process to obtain larger citric acid crystals. The crystalline citric acid is separated from the mother liquor through centrifugation or filtration.

Drying

The final step in the manufacturing process is the drying of citric acid crystals. The crystals are subjected to a drying process to remove any remaining moisture. This can be done through a variety of methods, including air drying, fluidized bed drying, or spray drying.

Once dried, the citric acid crystals are packaged and ready for distribution and use in various industries such as food, beverages, pharmaceuticals, and cosmetics.
