The refining process involves several steps, including distillation, which separates the different components of crude oil based on their boiling points. Cooking oil is obtained from the fraction of crude oil that has a lower boiling point.
Once the crude oil is separated into different fractions, the cooking oil fraction undergoes further refining to remove impurities and improve its quality. This refining process typically involves processes such as degumming, neutralization, bleaching, and deodorization.
Firstly, degumming is carried out to remove phospholipids present in the crude oil. Phospholipids can cause the oil to become hazy and develop off-flavors during cooking. Degumming helps to improve the clarity and stability of the cooking oil.
Next, neutralization is performed to remove free fatty acids, which are responsible for the oil's acidity. Free fatty acids can affect the taste and quality of the cooking oil. Neutralizing agents, such as sodium hydroxide, are used to react with the free fatty acids and convert them into soap, which can then be easily separated from the oil.
Bleaching is the subsequent step, which involves the removal of pigments and other impurities from the cooking oil. Activated carbon or clay is added to the oil and agitated, allowing them to adsorb the impurities. The oil is then filtered to remove the adsorbent, resulting in a clearer and more appealing color.
The final step in the refining process is deodorization. During this process, the cooking oil is heated under a vacuum to remove any volatile compounds that may cause odor or off-flavors. Steam or other stripping agents are used to carry away the volatile compounds, leaving behind a odorless and flavorless cooking oil.
