Citric Acid Production in Industry

Citric acid is one of the most widely used organic acids in industry and is primarily produced through microbial fermentation. It is a natural preservative and acidulant that is found in various fruits, especially citrus fruits like lemons and oranges. In industry, citric acid is produced on a large scale to meet the growing demand for its diverse applications.

The production of citric acid involves several steps, including raw material preparation, fermentation, and purification. The primary raw material used for citric acid production is molasses, a byproduct of the sugar industry that contains fermentable sugars. Other sugar sources, such as corn and sugarcane, can also be used.

The first step in citric acid production is the preparation of the fermentation medium. Molasses is diluted with water and supplemented with nutrients like nitrogen, phosphorus, and trace minerals, which are essential for microbial growth. This medium is then sterilized to remove any unwanted microorganisms.

Next, the fermentation process takes place. The fermentation medium is inoculated with an appropriate strain of the fungus Aspergillus niger. This fungus is able to convert the sugars in the medium into citric acid through a series of enzymatic reactions. The fermentation is carried out in large stainless-steel tanks equipped with agitators to promote oxygen transfer and maintain uniform temperature and pH.

During the fermentation process, the fungus secretes enzymes that break down the sugars into simpler compounds. These compounds are then further metabolized by the fungus to produce citric acid as the final product. The fermentation typically takes several days to complete, during which time the citric acid concentration in the medium gradually increases.

Once the fermentation is complete, the fermentation broth is subjected to a series of purification steps to isolate and purify the citric acid. Initially, the broth is centrifuged to separate the fungal mycelium and other solid particles. The resulting liquid is then treated with calcium hydroxide to precipitate calcium citrate, which is a less soluble form of citric acid.

The calcium citrate precipitate is then filtered and washed to remove impurities. It is then treated with sulfuric acid to convert the calcium citrate back into free citric acid. The resulting solution is further purified through processes such as ion-exchange chromatography and activated carbon adsorption to remove any remaining impurities and colorants. Finally, the purified citric acid solution is concentrated and crystallized to obtain the final product.
