German Edible Mushroom Harvest Reaches 78,400 Tons in 2025

According to data from the Federal Statistical Office, Germany's 2025 edible mushroom harvest reached 78,400 tons from operations with at least 0.1 hectares of production area. This represents an increase of 760 tons, or one percent, compared to the previous year. The harvest volume was also 3,280 tons higher than the ten-year average from 2015 to 2024.

The production focus remains on champignon mushrooms, which accounted for 76,800 tons, or 97.9 percent, of the total edible mushroom harvest. The champignon harvest grew by 1.4 percent compared to 2024 and was 4.6 percent above the ten-year average. The remaining harvest consisted of varieties such as king oyster and oyster mushrooms, shiitake, and other specialty mushroom cultures.

Nearly half of all edible mushrooms, 37,200 tons, were produced on organically managed cultivation areas. Champignons also dominated organic production, constituting 98.2 percent of that segment.

Cultivation Area Sees Minimal Change

The total harvest area for edible mushrooms in 2025 was 355 hectares, a marginal increase of 0.2 percent from the year before and 4.2 percent above the ten-year average. Exactly half of this total area was farmed organically. The harvest area dedicated to champignons increased by 0.2 percent to 342 hectares, which is 3.8 percent above the average for the previous decade.

Key Production States Identified

Lower Saxony and North Rhine-Westphalia continued to be the most significant states for edible mushroom cultivation. Lower Saxony reported a harvest area of 200 hectares, while North Rhine-Westphalia's area was 80 hectares.

The statistical office noted that a complete comparison of organic production data with previous years is not possible due to a methodological change in classification implemented in 2025.
