Beef Prices Rise to Record Highs Amid Historic Cattle Herd Shortage

According to a report from Yahoo Finance, the retail price of beef has increased across all categories compared to one year ago, with no indication of a near-term decline. An agricultural economics expert from the University of California, Davis, attributes the situation to high demand and low supply, while a cattle association president suggests the profit margins of major international meatpackers could be a factor.

Demand and Supply Dynamics

The expert notes that increased consumer interest in high-quality protein has driven spending on such products. However, beef prices are specifically affected by the condition of the national cattle herd. As of the start of this year, the herd size was reported at its lowest point in 75 years, a decline that began several years prior.

This historically small herd has stabilized at a low level. Concurrently, the selling price for live cattle has been increasing for several years. Ranchers face a choice between selling cattle at high prices or retaining them to rebuild herds. The current trend has seen more cattle entering the market, maintaining a constrained beef supply alongside strong demand, which the expert identifies as the core reason for higher prices.

Reasons for Herd Contraction

The expert points to two primary reasons for the reduced herd size. First, advancements have improved meat yield per animal, meaning fewer cattle are required to meet demand, leading to a gradual population decline over time. Second, a price spike for cattle that began a few years ago and persisted prompted ranchers to sell older cows and heifers to capitalize on what they believed were temporarily high prices.

Instead, cattle prices rose further in late 2025 and into 2026, postponing the anticipated period for herd rebuilding.
